WILD SALMON BURGERS & CRISPY SALMON SKIN
INGREDIENTS:
1 lb wild salmon filets, skin removed (but reserve it)
2 cloves of garlic, smashed
1 shallot, peeled and roughly chopped
1 scallion, roughly shopped
1 small jalapeno, seeded and roughly chopped
handful of fresh parsley or cilantro, tough stems removed
1/2 cup gluten free panko breadcrumbs
1 large egg, whisked
1 tablespoon tamari
1 teaspoon sesame oil
1/2 teaspoon kosher salt
a few cracks of freshly cracked peppercorn
HOW TO PREPARE:
Remove the skin from the salmon filet, but set it aside.
Break down the salmon filet into a few smaller pieces and add it to a food processor, pulse the salmon until it breaks down a bit but do not let it turn into a paste, you still want some small pieces of salmon in there to give the burger a nice hearty texture but for it to be small enough that the burger will stay together. Remove the salmon into a large mixing bowl.
Next, add the garlic, shallot, scallion, jalapeno and herbs to the food processor, pulse to break everything down until it is finely chopped. Remove the mixture to the bowl with the salmon.
Mix in the breadcrumb, egg, tamari, salt, pepper. Mix well.
Divide the mixture into 4 equal portions and shape each patty about 1/2 inch thick. If the mixture feels too wet, add a bit more breadcrumb as needed.
Place the formed patties on a tray and refrigerate them for about 15-20 minutes to help them firm up. This will make them easier to cook without falling apart.
Heat a large skillet over medium heat. Once the pan is hot, add a drizzle of avocado or coconut oil. Add the salmon patties.
Cook for 3-4 minutes per side, until golden brown on each side and the center is cooked through (temperature should read a minimum of 145 degrees).
Serve the burgers on top of your favorite salad, slaw, or grain.
Optional toppning ideas: sliced avocado, sliced radish, pickled cucumbers or onions, nori/seaweed, sesame seeds/everything bagel seasoning, sriracha, spicy mayo, etc.

Using a sharp knife cut down the salmon skin, trimming off any fat if needed. Pat the skin dry on both sides. Lightly dust the skin with cornstarch and sea salt. Place the skin on a parchment lined baking sheet, scales side up, and bake in a preheated 400 degree oven until crispy, about 8-10 minutes depending on thickness of skin. Let cool slightly before serving. Enjoy as a snack, garnish, or part of a dish.
