DIY OVEN BAKED SPICED TORTILLA CHIPS
What you’ll need:
- your favorite brand of soft flour tortillas
- a neutral cooking oil
- your favorite spices (garlic powder, onion powder, paprika, cumin, chili powder, oregano, etc.)
- sea salt
How to: Preheat oven to 375 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Using a pizza (wheel) cutter, cut the tortillas into equally sized triangles (4, 6, or 8 depending on how big/small your tortillas are). Arrange the tortilla triangles on the baking sheet in a single layer. Using a pastry brush or the back of a spoon, lightly brush the tortillas with oil. Season the tortillas generously with your spice blend. Flip and repeat. Bake the tortillas in the oven for about 8-10 minutes or until the tortillas are lightly golden brown. Flip and bake another 3-5 minutes on the other side. Remove from oven and let sit for 5 minutes before serving. Enjoy with your favorite dip or with our Veggie Loaded Queso (recipe below).
VEGGIE LOADED QUESO

2 cloves garlic, finely minced
1-2 jalapeños, ribs and seeds removed, finely diced
1 1/2 cups whole milk

3 cups shredded cheese (either a single cheese like sharp cheddar or a cheese blend)
Any of your favorite spices, to taste: cumin, paprika, garlic powder, onion powder, mustard powder, chipotle, cayenne, oregano, thyme, etc.
salt, to taste
How to: Heat a skillet over medium heat. Add in butter, onion, garlic, jalapeño (if using) and a pinch of salt. Sweat until translucent, about 3-5 minutes.
Add in flour and spices and cook for 2-3 minutes, stirring constantly.
Slowly add in milk, simmer until slightly thickened, about 3 minutes.
Mix in cheese, stirring constantly until the cheese is fully melted and the mixture is smooth. Taste and adjust seasonings as needed.
Remove from heat and load on any of your favorite veggies, we suggest: diced tomato, diced or sliced avocado, diced bell peppers, caramelized onions, cooked black beans, chopped cilantro, sliced radish, finely sliced scallions, chopped raw baby spinach, chopped steamed broccoli, sliced black olives, etc.
Serve immediately.
CRISPY BAKED WINGS
What you’ll need, for the wings:
- 2 pounds chicken wings (flats and drums)
- 1 cup whole wheat pastry flour or rice flour
- spices: 1/2 tablespoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon of dried thyme (or other dried herb like oregano or rosemary), pinch of cayenne (optional), 1/2 teaspoon salt, 1/4 teaspoon black pepper
- 2 tablespoons neutral high heat cooking oil like avocado oil or preferred
For the wing sauce:
- 2 tablespoons unsalted butter
- 3 tablespoons tabasco sauce or your favorite hot sauce
- 2 tablespoons pure maple syrup or honey
How to: Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set a wire baking rack on top of the baking sheet.
In a large bowl combine the chicken and oil. Mix well, coating all the chicken with the oil. Set aside.
In a large bowl, combine the flour and spices. Mix well.
Transfer the chicken into the flour mixture and coat the chicken completely. Shake any excess off.
Transfer the chicken pieces to the baking rack.
Roast in the oven for 15 minutes. Flip the chicken and return to the oven for another 15 minutes.
While the chicken is baking, prepare the sauce: in a small saucepan combine the tabasco (or hot sauce), butter and maple syrup (or honey), stirring until the butter has melted and the ingredients are fully combined.
Remove the wings from the oven and transfer into a large bowl. Pour the wing sauce on top and coat completely.
Transfer the wings to a platter for serving. Top with scallions, chopped garlic, fresh herbs, or any other preferred toppings. Serve alongside your favorite fresh veggies like celery, carrots, etc and your favorite wing dip like ranch or blue cheese.
