weekend baking | Savory Drop Biscuits
Heat up the oven and get baking! Savory Drop Biscuits are simple to throw together and pair nicely with eggs for breakfast, a bowl of soup or chili for lunch, or as a dinner side.
INGREDIENTS:
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon salt
2 teaspoons sugar
6 tablespoons (3/4 stick) unsalted butter, cut into 1/2 inch cubes and kept COLD
1 cup buttermilk (store bought or make your own simple buttermilk stand-in)
Choose any of your favorite savory mix-ins, fold in as much or as little as you would like:
Shredded or grated cheese (sharp cheddar, mozzarella, pepper jack, parmesan, pecorino, fontina, etc.)
Aromatics like caramelized onion or shallot, chopped garlic, scallions, or leeks
Fresh or dried herbs (rosemary, thyme, chives, basil, etc.)
Raw or cooked veggies like broccoli, spinach, carrots, cauliflower, etc
Chopped salami, pepperoni, sun-dried tomatoes, olives, etc.
Nuts/Seeds (poppy, sesame, hemp, sunflower, etc)
Everything bagel seasoning
Spices (onion powder, garlic powder, paprika, cayenne, etc.)
DIRECTIONS:
Preheat your oven to 375 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, combine flour and cubes of butter. Using your fingertips, smash the butter and flour together to create small flakey pieces. Mix in remaining dry ingredients: baking powder, baking soda, salt and sugar.
Create a well in the center and pour in the buttermilk. Using a spoon, mix together the dry and wet ingredients until a wet stick dough forms.
Using a large cookie scoop or 2 spoons, drop equal mounds of the dough onto the prepared baking sheet, leaving a little room in between each.
Bake until golden brown all over, about 18-20 minutes depending on how big you made them and the true temp of your oven.
Remove from the oven and let stand on the baking sheet for about 5-7 minutes before transferring to a wire cooling rack.
