APPLE HAND PIES
INGREDIENTS:
For the dough:
2 1/4 cups all purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 stick cold butter, cut into cubes
1 egg
1/3 cup ice cold water
1 tablespoon apple cider vinegar
For the filling:
2 apples, peeled and diced
1 tablespoon butter
2 tablespoons sweetener (granulated sugar, brown sugar, coconut sugar, maple syrup, honey, etc.)
1 teaspoon cinnamon
* you can also use prepared apple butter, applesauce or any flavored jams!
You will also need:
egg wash (1 egg + 1 tablespoon water) or melted butter
optional toppings: old fashioned oats, coarse sugar, cinnamon-sugar, etc.
Equipment: measuring cups/spoons, food processor, plastic wrap, small saucepan, small masher or fork, baking sheet, cookie cutters or the mouth of a drinking glass to cut out pie shapes, pastry brush or basting brush.
DIRECTIONS: Preheat oven to 375 degrees. Line a baking sheet with parchment paper for easy cleanup. If you do not have parchment paper, skip this step. You can also bake directly on the baking sheet.
Add dry ingredients to the food processor: flour, salt, sugar and pulse to combine.
Add cold butter cubes to food processor and pulse to form crumbles. The mixture should resemble a coarse sand.
With the processor running, add cracked egg and vinegar. Slowly add the ice water a little at a time and continue to process until the dough ball forms. You may not need all the water so go slow.
Turn the dough out onto a floured workspace and gather the dough into a disc. Wrap the dough in plastic wrap and chill in the fridge for about 1 hour before using.
While the dough is chilling, prepare the filling. Heat a small saucepan over medium heat. Add 1 tablespoon of butter and melt. Add in diced apples, cinnamon and sweetener. Let the mixture cook down until apples are tender. Mash with a masher or fork until smooth. Set aside to cool completely.
Once your dough is ready, roll it out on a lightly floured workspace.
Use your cookie cutters or the mouth of a drinking glass to cut out pieces of the dough. You will need one top piece and one bottom piece for each hand pie.
Add some of the cooled filling to the center of one of the pie dough cut outs, how much depends on how big your cutout is. Do not overfill.
Use a fork to crimp the edges of the pie shut.
Place on baking sheet. Repeat with remaining pieces of dough.
Once you have all your pies on the baking sheet, brush each with the egg wash (or melted butter).
Sprinkle with any toppings you are using.
Bake in the oven until golden brown. Cook time will depend on how big your pies are and the true temp of your oven. Estimated bake time approximately 15-17 minutes.
Let cool before serving.
