Quick Pickled Veggies for Earth Day

Between praising the ultimate mom (Mother Nature) and celebrating sustainability, Earth Day is easily one of our favorite holidays at Freshmade! While there are countless ways to reduce, reuse and recycle in the kitchen, we want to share one of our go-to sustainable snacks - Quick Pickled Veggies! 

One of the reasons we love Quick Pickled Veggies is because you can pickle literally anything; though, we wouldn't recommend pickled Oreos. Pickled Carrots, Pickled Beets, Pickled Onions, Pickled Radishes, Pickled Tomatoes (like the ones we made here!). Whatever veggies you have lying around, we highly recommend pickling them. If you’re feeling super adventurous, you can even try pickling some fruits!

Another reason we love Quick Pickled Veggies is because it is a delicious way to extend the lives of all your veggies. Maybe you’re making dinner one night and the recipe only calls for half an onion or maybe you forgot about a few stalks of celery that seem to be on their last leg. Whatever the reason, pickling is a quick and easy way to breath new life into your veggies without making you feel like you’re in a race against the clock to finish them while they’re still fresh.

The last reason we love Quick Pickled Veggies is because they’re so versatile. You can enjoy them as an afternoon snack, serve them as a side with dinner, or chop them up for a salad topper. We highly recommend keeping a few jars of your favorite homemade pickles in the fridge at all times. You never know when those pickle cravings might strike!

The formula for Quick Pickled Veggies is as easy as 1, 2, 3. 

  1. Pick your veggie or veggies.

  2. Pick your vinegar base.

  3. Pick your pickling spice blend.
