Corn is one of those delicious summer harvests that go well into fall. In this class kids will learn how to to make Esquities, a smoky, sweet, spicy, and tangy off the cob version of elotes, a grilled corn-on-the-cob Mexican street corn. We’ll also make some baked spiced tortilla chips for serving. For this class you will need: corn, salt, cheese (cotija, parmesan, feta, ricotta salt, nutritional yeast or other), scallions, cilantro or parsley, jalapeño, garlic, mayo (dairy or non-dairy), lime, oil, salt, pepper, tortillas (corn or flour), and spices.
