Strawberry-Banana Muffins

  1. 1 large egg
  2. 1/2 cup brown sugar
  3. 2 tablespoons maple syrup
  4. 2 tablespoons honey
  5. 1/3 cup avocado oil or alternative
  6. 1/4 cup greek yogurt
  7. 2 teaspoons pure vanilla extract
  8. 1 1/4 cups all-purpose flour
  9. 1/2 teaspoon baking powder
  10. 1/2 teaspoon baking soda
  11. 1/2 teaspoon salt
  12. 1 cup mashed ripe bananas (about 2 large bananas or 3 small bananas)
  13. 1 1/2 cups fresh strawberries, quartered
  14. topping (optional): 1/4 cup oats + 1 tablespoon brown sugar + 1/2 teaspoon cinnamon
  1. Preheat oven to 375 degrees. Line a muffin tin with muffin liners.
  2. In a large bowl combine egg, sugars, oil, maple syrup, honey, yogurt and vanilla. Whisk to combine.
  3. In a separate bowl, mix together flour, baking powder, baking soda and salt.
  4. Gently fold in the bananas and strawberries.
  5. Fill the muffin cups about 1/2 way full with the batter.
  6. For the topping, mix together the oats, brown sugar and cinnamon. Sprinkle the tops of the batter with some of the mixture.
  7. Bake for about 15-20 minutes or until golden brown and cooked all the way through.
