  1. 1 cup cooked grains like brown rice, quinoa, farro or other
  2. 1 small onion, diced
  3. 2 cloves of garlic, minced or grated on a microplane
  4. 1/4 cup pumpkin puree (can also use sweet potato or butternut squash)
  5. 1/4 cup canned black beans, drained and rinsed
  6. 1/4 cup diced tomatoes
  7. 1/4 cup kale, spinach or other greens, finely chopped
  8. 1/4 cup carrots, diced or grated
  9. 1 tablespoon chopped fresh cilantro leaves or other fresh herbs
  10. 1/2 teaspoon cumin
  11. 1/2 teaspoon garlic powder
  12. 1/4 teaspoon onion powder
  13. salt and freshly ground black pepper, to taste
  14. 4 small bell peppers, tops cut, stemmed and seeded
  1. Preheat oven to 375 degrees. Spray casserole pan that can fit 4 peppers with cooking spray.
  2. Prepare your peppers by washing them, cutting off the tops (but save them) and removing seeds and core. With a sharp paring knife, cut jack-o-lantern faces into the pepper.
  3. In a large bowl, mix together your grain, onion, garlic, puree, tomatoes, carrots, greens, herbs, spices salt and pepper. Gently fold in the cheese and black beans.
  4. Fill the peppers with the mixture.
  5. Place the peppers in the prepared baking dish so that they lean against each other standing up. Put the tops on the peppers. Bake until the peppers are tender and the filling is heated all the way through, approx 30 minutes.
