Ingredients
  1. Organic heavy cream
  2. A jar with a tight fitting lid (old jelly jars, small mason jars, even baby food jars work great for this!)
  3. salt (optional)
Optional ingredients for a savory butter
  1. fresh herbs like parsley, basil, cilantro, thyme, rosemary, oregano, etc.
  2. fresh lemon or lime zest
  3. minced garlic, shallot, red onion, scallions
  4. spices like curry powder, chili powder, cumin, etc.
Optional ingredients for a sweet butter
  1. honey
  2. maple syrup
  3. brown sugar
  4. cinnamon
  5. orange zest
  6. fresh fruit like strawberries, blueberries, blackberries, etc.
Instructions
  1. Fill the jar halfway with fresh, cold heavy cream.
  2. Turn on some music and get your groove on! Shake, shake shake! Shake the jar up and down until the cream thickens and forms a solid ball - your butter is beginning to form. Continue shaking until the liquid separates from the ball. The ball is fresh butter, the liquid is buttermilk. Pour off the liquid (the buttermilk) and save it for another recipe or discard.
  3. Add salt, to taste to your fresh butter (optional). Serve as desired.
  4. Mix in any optional ingredients until smooth to create a savory butter or a sweet butter (see below for some suggestions)
