Green Bean Casserole

We gave this holiday classic a Freshmade makeover. Believe it or not, this recipe was a HUGE hit with all the kids, even our pickiest eaters gobbled it down!

  1. 1 cup, chopped – onion
  2. 1 teaspoon – olive oil
  3. 4 cup – green beans
  4. 2 medium sized tomatoes, diced
  5. 2 tablespoon – avocado mayonnaise or your favorite
  6. 1/4 teaspoon – garlic powder or fresh minced garlic
  7. 1/4 teaspoon – salt
  8. 1/2 cup – bread crumbs, plain * we made our own homemade breadcrumbs!
  9. 1/2 cup – Parmesan cheese
  1. Saute onion in olive oil in a skillet until onion is cooked and tender. Add remaining ingredients to skillet. Cook until just warmed through.
  2. Pour all vegetables in a 2 quart casserole dish (we made individual ones) and sprinkle bread crumbs and parmesan cheese on top.
  3. Bake at 375 degrees or just until bubbly (about 15-20 minutes).
