  1. 2 cups all-purpose flour
  2. 2 apples, peeled and grated
  3. 1/2 cup brown sugar
  4. 2 teaspoons baking powder
  5. ½ tsp cinnamon
  6. ½ tsp nutmeg
  7. 1 teaspoon salt
  8. ½ cup apple cider
  9. ¼ cup milk or milk alternative
  10. 2 eggs, beaten
  11. 1 teaspoon pure vanilla extract
  12. 1 tablespoon unsalted butter, melted
  13. Cooking spray
For the topping
  1. ½ cup dry old fashioned oats
  2. ¼ cup brown sugar
  3. 1 tablespoon cinnamon
  1. Preheat oven to 375 Degrees. Lightly grease a doughnut pan with cooking spray.
  2. In a large bowl, mix together the dry ingredients - flour, baking powder, cinnamon, nutmet, and salt.
  3. In a separate bowl, mix together your wet ingredients - brown sugar, egg,
  4. milk, vanilla extract, melted butter, and apple cider.
  5. Mix your dry ingredients into your wet ingredients. Stir until combine.
  6. Divide the batter amongst the donut pan, filling each about ¾ full.
  7. Mix together the topping - oats, brown sugar and cinnamon. Sprinkle each of the donuts with the mixture.
  8. Bake for about 10-12 minutes or until lightly golden brown and cooked all the way through - test by inserting a toothpick.
  9. Let cool for about 5 minutes before removing from pan.
  2. Use the leftover apple skins to make a quick healthy snack: line a baking sheet with parchment paper. Arrange apple skins in a single layer. Sprinkle with a little sugar and cinnamon. Bake at 350 until the edges begin to crisp up a little, about 8-10 minutes. Remove from oven and let them cool and they will crisp up.
