Appledillas (quesadillas with smashed apples, greens and cheddar)

For the smashed apples
  1. * makes enough for about 4 quesadillas
  2. 4 apples, peeled, cored and diced
  3. ¼ cup brown sugar
  4. 1 teaspoon cinnamon
  5. 1 tablespoon unsalted butter
  6. 1-2 tablespoons of water (depending on how thick or thin you want your apple spread)
  7. Pinch of salt
For the quesadillas
  1. 1 flour tortilla per
  2. Handful of fresh greens like spinach, arugula, kale, or other, chopped, hand torn or scissor cut
  3. Cheddar cheese, grated
  4. Pinch of garlic powder
  5. Pinch of salt and pepper
  1. Heat a small saucepan over medium heat. Add in butter and apples. Saute for 2-3 minutes. Add sugar, cinnamon and water. Let cook over medium heat for about 8-10 minutes or until apples are tender.
  2. Remove from heat and mash apples with a potato masher or fork until desired consistency is reached. Let cool.
  3. Spread smashed apple mixture over half of your tortilla. Fill with spinach (or other greens) and top with shredded cheese. Add a pinch of garlic powder, salt and pepper.
  4. Fold over into a half moon shape. Cook in panini press, on griddle or in the oven until the tortillas are lightly golden brown and the cheese is melted. Cut each into 4 triangles and serve warm.
