Appledillas (quesadillas with smashed apples, greens and cheddar)

For the smashed apples
- * makes enough for about 4 quesadillas
- 4 apples, peeled, cored and diced
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon unsalted butter
- 1-2 tablespoons of water (depending on how thick or thin you want your apple spread)
- Pinch of salt
For the quesadillas
- 1 flour tortilla per
- Handful of fresh greens like spinach, arugula, kale, or other, chopped, hand torn or scissor cut
- Cheddar cheese, grated
- Pinch of garlic powder
- Pinch of salt and pepper
Instructions
- Heat a small saucepan over medium heat. Add in butter and apples. Saute for 2-3 minutes. Add sugar, cinnamon and water. Let cook over medium heat for about 8-10 minutes or until apples are tender.
- Remove from heat and mash apples with a potato masher or fork until desired consistency is reached. Let cool.
- Spread smashed apple mixture over half of your tortilla. Fill with spinach (or other greens) and top with shredded cheese. Add a pinch of garlic powder, salt and pepper.
- Fold over into a half moon shape. Cook in panini press, on griddle or in the oven until the tortillas are lightly golden brown and the cheese is melted. Cut each into 4 triangles and serve warm.
